About This Wine

Crisp, bright, and full of character, this is our take on English Sauvignon Blanc — a wine shaped by place, history, and fresh perspective.

Made from 100% estate-grown fruit, Sunken Stones opens with vibrant aromas of lime, elderflower, and gooseberry, layered over green apple and a flinty, mineral edge. There is a subtle roundness and soft texture, balancing the zesty acidity with a clean, refreshing finish.

The name is inspired by the Roman road buried beneath Greenhurst Field, our largest vineyard site — a quiet reminder of the long, layered history beneath our feet. The hare on the label, part of our evolving animal-led collection, speaks to speed, elegance, and the natural rhythm of the landscape.

Lively, textured, and refreshingly dry, this is a wine made for the moment, to discover with friends and share stories over a glass.

Tasting Notes

Bright and expressive, this cool-climate Sauvignon Blanc opens with lime, gooseberry, and a gentle hint of elderflower. Crisp and vibrant on the palate, it’s driven by mouth-watering acidity and flavours of citrus zest and green herbs. The mid-palate is sleek and focused, finishing clean with refreshing mineral clarity.

Fruit

100 % Sauvignon Blanc

Site

Planted at the southern end of Greenhurst Field, this 1-hectare block of Sauvignon Blanc sits on a gentle, south-facing slope within our largest vineyard parcel. Its open position allows for excellent morning and evening sunlight, supporting slow, even ripening — ideal for developing the grape’s fresh, aromatic character. Set near the foot of the slope, the vines benefit from extra heat accumulation in summer, helping build flavour and balance. Beneath the surface, the remains of a Roman road hint at the site’s rich past — a hidden layer of history and intrigue beneath every vine.

Soil

Sandy Silt Loam: Sand - 27.93%, Silt - 54.9%, Clay - 17.17%

Vinification

Grapes were hand-picked at optimum ripeness, then carefully sorted and gently destemmed before pressing. Fermentation was carried out in temperature-controlled stainless-steel tanks, with early heat application to reduce green pyrazine compounds and enhance fruit expression. A short, natural malolactic fermentation followed, softening the acidity while maintaining freshness. The wine spent the winter on fine lees in stainless steel, building texture and mid-palate weight before being gently filtered and bottled in early summer 2025.

Vintage

A cool, wet season in 2024 brought challenges, but precise canopy management delayed downy mildew, allowing longer hang time for greater flavour development. Despite modest sugar levels, the fruit achieved excellent phenolic ripeness — resulting in a Sauvignon Blanc that reflects the focus, patience, and resilience of the vintage.

Food Pairings

Fresh oysters, grilled white fish, or a classic goat’s cheese salad to highlight its freshness. Its bright, herbaceous edge complements asparagus, green vegetables, and light dishes featuring lemon or fresh herbs.
