100% Chardonnay

Greensand

Harvested in October 2019, the Chardonnay fruit was gently pressed and fermented in stainless steel to preserve freshness, purity, and varietal character. Bottled in May 2020 for secondary fermentation, the wine then spent over five years ageing on lees, developing depth, texture, and complexity whilst retaining vibrant acidity and elegance. Disgorged in July 2025 and finished with a light 6g/L dosage, the wine was further matured under cork prior to release, bringing additional harmony, finesse, and refinement.

The 2019 vintage provided a long and steady growing season, encouraging slow, even ripening across the vineyard. Warm summer days balanced by cooler nights and a calm autumn helped preserve bright natural acidity whilst developing delicate aromatics and concentration. The result is a sparkling wine vintage celebrated for its purity, elegance, freshness, and exceptional ageing potential.

Perfect with oysters, scallops, and dressed crab, this wine’s precision and minerality enhance fresh seafood beautifully. It also pairs effortlessly with grilled white fish, lobster with beurre blanc, sushi, and sashimi. Its creamy texture and autolytic depth make it equally suited to richer dishes such as roast chicken, wild mushroom risotto, and aged cheeses like Comté and Parmesan. The fine mousse and extended ageing also make it an exceptional aperitif, combining freshness with complexity.
