At Abingworth, our winery was designed to support high-quality winemaking at every stage — from grape to bottle. Built in phases as the vineyard grew, it’s a space that reflects our mission: to create outstanding English wines that are true to site, expressive, and tell the story of our unique site in the South Downs.
Phase 1 (2024): Constructed to handle our first small harvest — around 13 tonnes
Phase 2 (2025): Expanded to support full-scale production as the vineyard matured.
Current capacity: Can now process up to 60 tonnes per vintage.
Our winery layout was carefully planned to support smooth movement and precision across every step of the winemaking process:

- Temperature- and humidity-controlled barrel room for optimal aging
- Wastewater management systems designed to protect the environment and surrounding land

Our primary focus is producing high-quality English still wines, pushing the boundaries of what’s possible in a cool-climate setting.
We work with Pinot Noir (for rosé and red), Chardonnay, Pinot Gris, Sauvignon Blanc, and Cabaret Noir, a disease-resistant PIWI variety, allowing us to explore both classic and progressive styles.
Small releases of traditional method sparkling are also in production.
We’ve equipped the winery with modern, precise technology to support quality at every level:
Vibrating sorting tables & oscillating destemmer for gentle fruit handling
Pneumatic press systems for careful juice extraction
Advanced cooling/heating controls to fine-tune fermentation
Fermentation & aging vessels:
- Subtle French oak barrels
- Textured concrete tanks
- Stainless steel for purity and control.
We take a minimal intervention approach: guiding, not manipulating, the wine to bring out the best of our fruit.
